For the Cake Batter

  • 3-4 medium apples (Granny Smith or Golden Delicious) Choose sweet and tart apples for best flavor.
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted Can substitute with margarine.
  • 1 teaspoon vanilla extract Optional for added flavor.
  • 1 teaspoon cinnamon Adds warmth and flavor.
  • ½ teaspoon salt Enhances flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Peel and slice the apples into thin wedges. Soak them in lemon juice and water to prevent browning.
  • In a large bowl, mix the flour, sugar, and cinnamon together.
  • In another bowl, whisk the eggs, melted butter, and vanilla extract until combined.
  • Gently fold the wet ingredients into the dry ingredients until just combined.
  • Fold in the apple slices, ensuring they are evenly distributed in the batter.

Baking

  • Pour the batter into a greased 9-inch round cake pan.
  • Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  • Monitor closely for golden brown edges.

Cooling

  • Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack.

Notes

Serve Torta di Mele with whipped cream or vanilla ice cream for an extra treat. Store leftovers in an airtight container for up to 3 days at room temperature, or freeze for up to 2 months.
