Ingredients
  

For the Marinade

  • 2 tablespoons Heath Riles BBQ Everyday Rub
  • 2 tablespoons Heath Riles BBQ Sweet Rub
  • ¼ cup Olive oil
  • ¼ cup Apple cider vinegar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt

For the Chicken

  • 4 pieces Bone-in, skin-on chicken cuts (thighs or breasts) Recommended for optimal juiciness

Preparation

  • In a bowl, mix the Heath Riles BBQ Everyday Rub and Sweet Rub with olive oil and apple cider vinegar. Add garlic powder, onion powder, black pepper, and salt, and whisk until smooth.
  • Put your chicken in a bag or a shallow dish. Pour the marinade over it, ensuring it covers all sides.
  • Seal the bag or cover the dish and refrigerate for at least 2 hours.

Setting Up the Traeger Grill

  • Clear out any leftover pellets to avoid unwanted flavors.
  • Clean the grill, plug it in, and set the temperature to 225°F.
  • Let the grill heat up completely before placing the chicken inside.

Cooking

  • Once marinated, place the chicken on the grill grates, ensuring it’s arranged for even cooking.
  • Close the lid and smoke the chicken for approximately 1.5 to 2 hours, depending on the size of the cuts.
  • Brush additional BBQ sauce on the chicken during the last 30 minutes of cooking.
  • Check the internal temperature, ensuring it reaches at least 165°F for safe consumption.

Notes

For crispy skin, dry the chicken skin well before cooking and use high heat at the end. Adjust wood pellets based on desired flavor.
