Ingredients
  

For the sandwich

  • 8 slices thick-cut bread (sourdough, brioche, or rustic white)
  • 8 strips thick-cut bacon
  • 2 tablespoons unsalted butter, softened
  • 3 types of cheese (e.g., cheddar, mozzarella, and provolone) Use a combination for best flavor

Instructions
 

Cooking the bacon

  • Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.

Preparing the bread

  • In the same skillet, butter one side of each slice of bread.
  • On the unbuttered side of half the bread slices, layer the three types of cheese, followed by the cooked bacon, and then another layer of cheese.
  • Top with the remaining bread slices, buttered side up.

Grilling the sandwiches

  • Grill the sandwiches in the skillet over medium heat until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
  • Slice and serve while hot.

Notes

The sandwich is best served hot and fresh. Pair with tomato soup or a salad. Store leftovers in the refrigerator for up to three days.
