  • 2 cups beef broth For added moisture and flavor.
  • 4 cloves garlic, minced Enhances the overall flavor.
  • 2 pieces bay leaves Remove before serving.
  • 2 tbsp Worcestershire sauce (optional) For extra umami flavor.

Preparation

  • Season the chuck roast with salt and pepper.
  • Heat oil in a skillet over medium-high heat and sear the roast on all sides until golden brown (about 3 minutes per side).
  • Chop the onion, carrots, and potatoes into bite-sized pieces.

Cooking

  • Place the seared roast in the Crock Pot; layer with vegetables, minced garlic, bay leaves, and pour in beef broth and Worcestershire sauce.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Shred the meat before serving alongside tender veggies; drizzle with juices.

Notes

Serve warm with bread and a green salad. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to three months. When reheating, thaw in the fridge overnight.
