Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until smooth.

Baking

  • Drop spoonfuls of the batter onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool before serving.

Notes

Store vanilla wafers in an airtight container at room temperature for about a week, or freeze them for longer storage. Experiment with flavors such as almond extract or cocoa powder for chocolate wafers.
