Vegetarian Chow Mein

Ingredients
  

Noodles and Tofu

  • 6 oz fresh chow mein noodles
  • 5 oz firm tofu, sliced

Vegetables

  • 2 cups shredded Chinese cabbage
  • ½ cup carrot, julienned
  • 2 stems scallion or shallot, cut into 2" pieces
  • 1 cup bean sprouts Keep them crisp.

Sauces and Seasonings

  • 2 tbsp oil For stir-frying
  • 2 cloves garlic, minced
  • ½ tbsp soy sauce
  • 1 tbsp Chinese cooking wine
  • ½ tbsp hoisin sauce
  • 1 ½ tbsp soy sauce For added flavor.
  • ½ tbsp chili garlic sauce or sriracha Optional for spice.
  • 2 tsp sugar
  • ½ tsp sesame oil
  • ¼ cup water To adjust the consistency.
  • White pepper

Instructions
 

Preparation

  • Prepare noodles according to packet instructions, usually by soaking them in boiling water.
  • Combine tofu with the marinade and set aside for 5 minutes.
  • In a small bowl, combine all sauce ingredients.

Cooking

  • Heat oil in a wok over high heat, add garlic, and stir-fry for about 10 seconds.
  • Add tofu and stir-fry until it starts to caramelize, about 1 minute.
  • Add cabbage and carrot, stir-fry until cabbage begins to wilt.
  • Add noodles, scallions/shallots, bean sprouts, and sauce.
  • Stir-fry until noodles are warmed through and sauce coats them evenly, about 1 minute.
  • Serve immediately.

Notes

Serve hot on its own or with dipping sauces. Top with sesame seeds or chopped peanuts for extra flavor. Store leftovers in an airtight container and consume within 2-3 days.
