Ingredients
  

Main Ingredients

  • 250 g mushrooms, sliced
  • 2 tsp olive oil for sautéing
  • 400 g cannellini beans, drained 1 can
  • 1 large carrot, grated
  • 70 g cashews, raw unsalted
  • 55 g panko breadcrumbs
  • 50 g grated parmesan
  • 1 egg
  • 2 tbsp mayonnaise
  • 1 clove garlic, minced
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 150 g cooked brown rice
  • ¾ cup green onions, sliced

For Serving

  • soft buns
  • lettuce

  • avocado
  • beetroot
  • French fries
  • baked potato wedges

Instructions
 

Beans and Veggies

  • In a pan, heat 2 tsp olive oil and sauté the sliced mushrooms until soft.
  • In a large bowl, mash the drained cannellini beans with a fork.
  • Add the grated carrot, cooked mushrooms, raw cashews, panko breadcrumbs, grated parmesan, egg, mayonnaise, minced garlic, and spices. Mix well.

Forming Patties

  • With your hands, form the mixture into burger-sized patties.

Cooking Methods

  • To Cook on Stove: Heat 2-3 tbsp of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown.
  • For BBQ: Preheat the BBQ grill and cook the patties for about 4-5 minutes on each side until charred.

Assembling the Burgers

  • Place the cooked patties on soft buns and add your favorite toppings like lettuce, tomato, cheese, pickles, sauces, avocado, or beetroot.

Notes

Make sure to mash the beans well for a smoother texture. Don’t skip the breadcrumbs; they help bind the mixture together. Adjust the seasonings according to your taste. Let the patties rest for a few minutes before cooking to hold their shape better.
