Watermelon Mojitos

A refreshing twist on the classic mojito, combining sweet watermelon, mint, and lime for a cool flavor, perfect for summer gatherings.

Ingredients
  

Main Ingredients

  • 1 personal sized seedless watermelon
  • 2 tbsp whole mint leaves (10-12 medium sized leaves)
  • 1 tbsp freshly squeezed lime juice
  • 1 tbsp white sugar Adjust based on taste
  • 1.5 oz white rum Skip for non-alcoholic version
  • to taste Club soda
  • 1 sprig mint (to garnish)
  • 1 wedge watermelon (to garnish)

Instructions
 

Preparation

  • Slice the watermelon in half. Remove the skin and pith from one half, then dice it into cubes.
  • Place the cubes into a blender and blend on high for 30 seconds, or until liquified.
  • Set a fine mesh strainer over a bowl and pour the puree through it. Discard the pulp.
  • Cut the remaining watermelon into slices and then into wedges.

Mixing

  • In a tall collins glass, combine the mint, lime juice, and sugar. Use a muddler to gently mash the mint leaves and dissolve the sugar into the lime juice.
  • Pour in the rum, then add enough ice to fill the glass.
  • Pour 4 oz of watermelon juice over the ice and mix with a bar spoon.
  • Top with club soda and garnish with mint leaves and watermelon wedges.

Notes

Serve immediately for best freshness. For extra cold drinks, chill glasses beforehand. Store leftover watermelon juice in the refrigerator for up to 3 days, but do not store mixed mojitos.
