Dough Ingredients

  • ½ cup warm water
  • 1 ½ cups active sourdough starter (258 grams)
  • 458 grams hard white wheat (freshly milled in a grain mill)
  • ¼ cup honey
  • ¼ cup sunflower oil
  • 2 pieces eggs
  • 1 tsp salt

Egg Wash Ingredients

  • 1 piece egg
  • 1 Tbsp water

Preparation

  • In a large bowl, mix the warm water with the active sourdough starter. Stir until combined.
  • Add the freshly milled hard white wheat, honey, sunflower oil, eggs, and salt to the bowl. Mix until a soft dough forms.
  • Knead the dough on a floured surface for about 5-10 minutes until it is smooth and elastic.
  • Place the dough in a greased bowl and cover it with a clean cloth. Let it rise for 4-6 hours at room temperature, or until doubled in size.
  • After the dough has risen, punch it down and divide it into small balls, about the size of a golf ball.
  • Arrange the dough balls on a greased baking sheet. Cover them and let them rise again for about 1-2 hours.
  • Preheat your oven to 375°F (190°C).

Baking

  • Whisk together the remaining egg and water to create an egg wash. Brush this mixture over the rolls.
  • Bake the rolls for 20-25 minutes or until golden brown.
  • Once baked, remove them from the oven and let them cool slightly before serving.

Notes

These rolls are best served warm and pair wonderfully with butter, honey, or your favorite dipping sauces. Store in an airtight container for 2-3 days at room temperature or freeze for up to 3 months.
