  • 2 pounds ground beef, 80% lean
  • 1 cup crushed tortilla chips
  • ½ cup salsa
  • 1 cup shredded cheddar cheese
  • ½ cup onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 eggs
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, crushed tortilla chips, salsa, cheddar cheese, onion, garlic powder, cumin, chili powder, eggs, salt, and pepper.
  • Mix until well combined.
  • Transfer the mixture to a loaf pan and shape it into a loaf.

Cooking

  • Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
  • Let it rest for 10 minutes before slicing.
  • Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, place slices in the microwave or oven until warmed through. To freeze, wrap tightly in plastic wrap and aluminum foil; it can last for about three months.
