  • 450 grams lean ground beef
  • 28 grams taco seasoning mix
  • 285 grams canned chopped tomatoes with green chiles, including juice
  • 200 grams grated cheddar cheese
  • 237 millilitres ranch dressing
  • 75 pieces frozen phyllo cup pastry shells

Instructions
 

Preparation

  • Set oven temperature to 180°C and allow to fully preheat.
  • In a large skillet over medium-high heat, brown the ground beef, breaking it into small crumbles until fully cooked through. Drain off excess fat.
  • Add taco seasoning and chopped tomatoes with green chiles, including their juice, to the cooked beef. Stir thoroughly and simmer for 5 minutes, reducing the liquid slightly.
  • In a mixing bowl, blend grated cheddar cheese with ranch dressing until evenly combined.
  • Add the seasoned beef mixture into the cheese and ranch blend. Mix uniformly.
  • Arrange phyllo cup shells on a parchment-lined baking tray. Fill each with approximately one tablespoon of the beef-cheese mixture.
  • Transfer the tray to the oven and bake for 10 minutes, or until cheese is melted and filling is bubbling.
  • Allow nibbles to cool slightly before serving warm.

Notes

Serve warm on a platter with extra ranch dressing for dipping. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven. These can also be frozen before baking for a make-ahead snack.
