Ingredients
  

For the Gravy

  • ½ tbsp oil For cooking sausages
  • 8 pieces sausages of choice Use high-quality sausages for best flavor
  • 1 large onion, halved and finely sliced (yellow, white or brown)
  • 2 cloves garlic, minced
  • 3 tbsp flour (plain) For thickening the gravy
  • 2 cups beef stock/broth Can use chicken or vegetable stock for variations
  • ¼ tsp salt Adjust to taste
  • ½ tsp black pepper Adjust to taste

For Serving

  • mashed potatoes Creamy mashed potatoes recommended
  • peas Classic side to serve with the dish

Instructions
 

Cooking Sausages

  • Heat oil in a large skillet over medium-high heat.
  • Add sausages and cook, turning them until browned all over and cooked through, about 8 minutes.
  • Once cooked, take the sausages out and place them on a plate. Lower the heat to medium.

Making the Gravy

  • Ensure you have about 2 tablespoons of oil left in the skillet. If less, add butter or oil.
  • Add the sliced onion and minced garlic to the skillet. Cook until golden brown, about 4 minutes.
  • Sprinkle the flour into the skillet and stir well. Cook, stirring constantly, for 2 minutes.
  • Pour in roughly 3/4 cup of beef broth and mix it into the onion until it becomes a paste.
  • Add the rest of the beef broth and stir until mixed. Use a whisk to smooth it out if lumpy.
  • Let it simmer for 2 to 3 minutes while stirring until the gravy thickens.
  • Add salt and pepper to taste. Stir well and adjust seasoning if necessary.

Serving

  • Serve the sausages with plenty of gravy, alongside creamy mashed potatoes and peas.
  • For garnish, top with fresh herbs for added flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth to loosen gravy.
