Ingredients
  

  • 4 slices whole grain or sourdough bread
  • ½ cup hummus store-bought or homemade
  • ½ avocado sliced
  • 1 small cucumber thinly sliced
  • 1 small tomato thinly sliced
  • ¼ cup shredded carrots
  • ¼ red onion thinly sliced
  • A handful of baby spinach or arugula
  • Salt and black pepper to taste
  • Optional: sprouts pickles, vegan mayo, or mustard

Instructions
 

  • Spread hummus on each slice of bread (both sides).
  • Layer ingredients: On two of the slices, arrange spinach, avocado, cucumber, tomato, carrots, red onion, and optional extras.
  • Season with a pinch of salt and black pepper.
  • Top and serve: Place remaining bread slices on top, press gently, slice in half, and serve immediately.
