- 4 slices whole grain or sourdough bread
- ½ cup hummus store-bought or homemade
- ½ avocado sliced
- 1 small cucumber thinly sliced
- 1 small tomato thinly sliced
- ¼ cup shredded carrots
- ¼ red onion thinly sliced
- A handful of baby spinach or arugula
- Salt and black pepper to taste
- Optional: sprouts pickles, vegan mayo, or mustard
Spread hummus on each slice of bread (both sides).
Layer ingredients: On two of the slices, arrange spinach, avocado, cucumber, tomato, carrots, red onion, and optional extras.
Season with a pinch of salt and black pepper.
Top and serve: Place remaining bread slices on top, press gently, slice in half, and serve immediately.
