Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  • In a mixing bowl, stir together the melted butter and brown sugar until smooth.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually stir the dry ingredients into the wet mixture until just combined.
  • Fold in the butterscotch chips and pecans, if using.
  • Spread the batter evenly in the prepared baking dish.

Baking

  • Bake for 20 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan before slicing. Cut into squares and enjoy.

Notes

For a stronger butterscotch flavor, add a few extra butterscotch chips. To make the bars even chewier, try underbaking them slightly. Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks.
