  • ½ bushel Concord grapes (about 10 pounds) Use fresh, ripe Concord grapes for the best flavor.
  • Water Water Enough to cover the grapes in the pot.

Preparation

  • Wash the Concord grapes thoroughly to remove any dirt or impurities.
  • In a large pot, combine the grapes with enough water to cover them.

Cooking

  • Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.
  • Use a potato masher or a wooden spoon to crush the grapes while they are cooking.
  • After simmering, strain the mixture using cheesecloth or a fine mesh strainer.
  • Pour the strained juice back into the pot and add more water if desired.
  • Bring the juice to a boil again and ladle it into sterilized canning jars, leaving about 1/2 inch of headspace.
  • Seal the jars with sterilized lids and process in a boiling water bath for 5 to 10 minutes.
  • Let the jars cool completely before checking the seals.

Notes

Make sure jars and lids are properly sterilized to avoid spoilage. Taste the juice before canning and adjust sweetness if desired. Label jars with the date of canning.
