Ingredients
  

For the Base

  • 1 cup flour (plain/all-purpose)
  • ½ cup brown sugar (loosely packed)
  • ½ cup desiccated coconut US: sweetened finely shredded coconut
  • 125 g unsalted butter (melted)

For the Caramel Filling

  • 125 g unsalted butter (roughly chopped)
  • ½ cup brown sugar (loosely packed)
  • 1 tsp vanilla extract (or essence)
  • 395 g sweetened condensed milk (1 can, 300ml)

For the Chocolate Topping

  • 200 g dark or milk melting chocolate US: semi-sweet chocolate chips
  • 1 tbsp vegetable oil

Instructions
 

Base Preparation

  • In a bowl, mix the flour, brown sugar, and desiccated coconut. Add melted butter and stir until combined. Press this mixture into a lined baking tray and refrigerate.

Caramel Preparation

  • In a saucepan, combine chopped butter, brown sugar, and vanilla extract. Cook over medium heat, stirring until the butter melts and the sugar dissolves.
  • Slowly add sweetened condensed milk and continue to stir for about 5 minutes until it thickens. Pour this caramel over the base and let it cool.

Chocolate Layer Preparation

  • Melt the chocolate with vegetable oil in a microwave-safe bowl or over a double boiler. Once melted, pour the chocolate over the cooled caramel layer. Spread evenly and let it set in the fridge.

Notes

Make sure the base is pressed down firmly in the tray to create a solid layer. Stir the caramel constantly to prevent it from burning. Allow ample time for the chocolate to set before cutting to achieve clean edges.
