  • 1 lb Ground beef Use thawed if previously frozen
  • 3 cups White potatoes Peeled and cut into small cubes
  • 1 medium Onion Chopped finely
  • 1 medium Bell pepper Chopped or diced as preferred
  • 2 cups Chicken broth For cooking mixture

Seasoning

  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 1 tablespoon Italian seasoning Optional for flavor
  • 1 teaspoon Smoked paprika Optional for a smoky depth
  • 2 sprigs Fresh thyme or rosemary Optional for fragrance

Cheese

  • 1 cup Cheese Shredded sharp cheddar, mozzarella or your preferred type.

Preparation

  • Peel and cut the potatoes into evenly sized cubes.
  • Chop the onion and bell pepper.
  • Gather all the ingredients and tools for cooking.

Cooking

  • Heat a large pot over medium heat and add a tablespoon of oil.
  • Once hot, add the cubed potatoes and sauté until golden brown, about 8-10 minutes.
  • Season the potatoes with salt, pepper, and any preferred spices.
  • Add the ground beef, breaking it apart with a wooden spoon and cook until browned.
  • Pour in the chicken broth and scrape the bottom of the pot to mix in browned bits.
  • Bring to a gentle simmer, cover the pot, and cook for about 15-20 minutes.
  • During the final minutes of cooking, stir in the cheese until melted and creamy.
