  • 4 whole corn cobs
  • 3 tbsp extra virgin olive oil
  • 1.5 tsp garlic powder
  • 2.5 tsp smoked paprika Or ordinary, plus more for garnish if desired
  • 2 tsp cooking/kosher salt
  • 2 tsp black pepper
  • 50 g unsalted butter
  • 1 clove garlic, finely minced

Optional Garnish

  • 2 tbsp parsley or coriander/cilantro, roughly chopped Optional for garnish

Instructions
 

Preparing the Corn

  • Stand each corn cob upright on a cutting board. Carefully slice down the sides of the cob to create long strips, aiming for about 4 to 6 ribs per cob.
  • Use a sharp knife to ensure clean cuts and avoid accidents.

Cooking the Corn Ribs

  • Preheat your oven to 400°F (200°C).
  • Place the corn ribs in a large bowl. Drizzle with extra virgin olive oil and sprinkle in the garlic powder, smoked paprika, salt, and black pepper. Toss to coat the corn evenly.
  • Arrange the coated corn ribs on a baking sheet and bake for about 20-25 minutes or until they are golden brown and tender.
  • In a small saucepan, melt butter over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Drizzle the garlic butter over the corn ribs before serving.

Notes

Corn ribs are best enjoyed fresh but can be stored for up to 3 days in an airtight container. Reheat in the oven to restore crispiness. You can also experiment with different seasonings like chili powder or parmesan cheese.
