Ingredients
  

  • 12 oz linguine
  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts (sliced)
  • Salt and pepper to taste
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ cup unsalted butter
  • 3 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • ½ tsp crushed red pepper flakes
  • 1 tbsp fresh parsley chopped
  • Optional: grated parmesan for topping

Instructions
 

  • Cook linguine according to package instructions. Drain and set aside.
  • Season chicken with salt, pepper, paprika, and garlic powder.
  • Heat olive oil in a skillet over medium heat. Cook chicken until golden and cooked through. Remove and set aside.
  • In the same skillet, melt butter. Add garlic, mustard, lemon juice, red pepper flakes, and parsley. Stir and simmer for 2–3 minutes.
  • Return chicken to the skillet and coat with cowboy butter sauce.
  • Toss in cooked linguine and mix well to combine.
  • Garnish with extra parsley and parmesan if desired. Serve hot.
