- 12 oz linguine
- 2 tbsp olive oil
- 1 lb boneless skinless chicken breasts (sliced)
- Salt and pepper to taste
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ cup unsalted butter
- 3 cloves garlic minced
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- ½ tsp crushed red pepper flakes
- 1 tbsp fresh parsley chopped
- Optional: grated parmesan for topping
Cook linguine according to package instructions. Drain and set aside.
Season chicken with salt, pepper, paprika, and garlic powder.
Heat olive oil in a skillet over medium heat. Cook chicken until golden and cooked through. Remove and set aside.
In the same skillet, melt butter. Add garlic, mustard, lemon juice, red pepper flakes, and parsley. Stir and simmer for 2–3 minutes.
Return chicken to the skillet and coat with cowboy butter sauce.
Toss in cooked linguine and mix well to combine.
Garnish with extra parsley and parmesan if desired. Serve hot.
