  • 1 lb ground beef (or sausage) Can substitute with a meat alternative for a vegetarian version.
  • 1 medium white onion (or yellow onion, chopped)
  • 2 cloves garlic (minced)
  • 15 oz diced tomatoes
  • 30 oz chili with beans Can use any canned chili of choice.
  • to taste Cheddar cheese (shredded, for topping) Optional topping.

  • In a large skillet or Dutch oven, cook the ground beef (or sausage) over medium heat until no longer pink.
  • Add the chopped onion and minced garlic, cooking until the veggies are soft and fragrant, about 3-5 minutes. If the mixture is too dry, add 1-2 tablespoons of olive oil to the pan.
  • Add the diced tomatoes and chili to the pot, bringing it to a boil.
  • Reduce the heat to a simmer and cook uncovered for 20 minutes, stirring occasionally.
  • Ladle the chili into serving bowls and serve immediately. Top with shredded cheddar cheese if desired.

Notes

For a spicier kick, add diced jalapeƱos or chili powder. To store leftovers, let the chili cool completely and place it in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
