Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder

Wet Ingredients

  • cup vegetable oil, shortening, or lard
  • 1 cup hot water

Instructions

Stand Mixer Instructions

  • In a stand mixer bowl, combine the flour, salt, and baking powder.
  • Add the vegetable oil, shortening, or lard and mix until you achieve a crumbly texture.
  • Slowly pour in the hot water while mixing until the dough forms a ball.
  • Knead the dough for about 5 minutes until smooth, then let it rest for 20 minutes.

Mix by Hand Instructions

  • In a large bowl, mix the flour, salt, and baking powder together.
  • Add the fat and mix with your fingers until crumbly.
  • Gradually add the hot water, mixing with a spoon until combined.
  • Knead the dough on a floured surface for 5 minutes until smooth, then let it rest for 20 minutes.

Cooking the Tortillas

  • After resting, divide the dough into 10 equal pieces and shape them into balls.
  • Roll each ball into a thin circle on a floured surface, about 1/8 inch thickness.
  • Heat a skillet over medium heat and cook each tortilla for about 30 seconds on each side, until they puff up and have light brown spots.

Notes

For softer tortillas, knead the dough well and let it rest longer. Ensure your skillet is hot enough before cooking; this helps achieve the right texture. Use a tortilla press for more uniform thickness if available.
