Ingredients
  

  • 4 –6 boneless skinless chicken breasts

Dry Rub:

  • 1 tablespoon light brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon coarse salt
  • ½ tablespoon garlic powder
  • ½ tablespoon dried oregano
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon white pepper
  • ½ teaspoon Cajun seasoning
  • 2 tablespoons olive oil optional, for wet rub

Instructions
 

  • Preheat Smoker: Set your smoker to 225°F (107°C).

Prepare Chicken:

  • Pat the chicken breasts dry with paper towels.
  • In a bowl, combine all dry rub ingredients.
  • Optionally, mix in olive oil to create a wet rub.
  • Generously coat each chicken breast with the rub, pressing the spices into the meat.

Smoke Chicken:

  • Place the seasoned chicken breasts directly on the smoker grates.
  • Insert a digital meat thermometer into the thickest part of a breast.
  • Smoke for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Rest and Serve:

  • Remove the chicken from the smoker and let it rest for 3–5 minutes.
  • Slice and serve immediately.
