- 4 –6 boneless skinless chicken breasts
Dry Rub:
- 1 tablespoon light brown sugar
- 1 tablespoon smoked paprika
- 1 tablespoon coarse salt
- ½ tablespoon garlic powder
- ½ tablespoon dried oregano
- 1 teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon white pepper
- ½ teaspoon Cajun seasoning
- 2 tablespoons olive oil optional, for wet rub
Prepare Chicken:
Pat the chicken breasts dry with paper towels.
In a bowl, combine all dry rub ingredients.
Optionally, mix in olive oil to create a wet rub.
Generously coat each chicken breast with the rub, pressing the spices into the meat.
Smoke Chicken:

Insert a digital meat thermometer into the thickest part of a breast.
