Ingredients
  

Main Ingredients

  • 1 kg baby potatoes (or other small potatoes, halved)
  • 4 tbsp extra virgin olive oil
  • 1 tsp cooking/kosher salt
  • ¼ tsp black pepper
  • 5 cloves garlic with skin on, smashed
  • 5 sprigs thyme (or 3 rosemary sprigs) For flavor enhancement
  • Finely chopped parsley or fresh thyme (optional) For garnish

Instructions
 

Preparation

  • Preheat the oven to 200°C / 400°F (180°C fan).
  • To smash the garlic, place the side of a knife on an unpeeled garlic clove. Hit firmly with the palm of your hand so the garlic bursts open but mostly stays intact.

Cooking

  • Put the potatoes on a tray and push them together. Drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat the potatoes evenly.
  • Add the thyme and smashed garlic, then toss again. Spread the potatoes out on the tray.
  • Roast in the oven for 30 minutes. After that, toss the potatoes and roast for another 25 to 35 minutes, or until they are golden brown.

Serving

  • If desired, sprinkle with parsley before serving. Enjoy immediately!

Notes

For extra crispy potatoes, avoid overcrowding the tray. Use parchment paper to prevent sticking. Feel free to add herbs like rosemary or thyme for extra flavor.
