Ingredients
  

  • 1 lb ground beef
  • 2 lbs potatoes peeled and diced
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • ½ cup beef broth
  • 1 tsp paprika
  • ½ cup shredded cheddar cheese optional

Instructions
 

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the diced potatoes and cook for about 10 minutes, or until they start to soften.
  • Add the ground beef, breaking it apart with a spatula. Cook until the beef is browned.
  • Stir in the diced onion and minced garlic, cooking until the onion is translucent.
  • Season with salt, pepper, and paprika. Pour in the beef broth and bring to a simmer.
  • Reduce heat to low, cover, and cook for another 10 minutes, or until the potatoes are tender.
  • If using, sprinkle shredded cheddar cheese over the top and cover for 2-3 minutes to let the cheese melt.
  • Serve hot, garnished with fresh parsley if desired.
