  • 1 lb lean ground beef Choose 90% lean or better.
  • 2 cups potatoes, diced Use any variety.
  • 2 cups carrots, chopped Fresh or frozen.
  • 2 cups celery, chopped
  • 2 cups canned diced tomatoes With or without juice.
  • 6 cups beef broth Use low-sodium or homemade if possible.

Seasonings

  • 1 tbsp Italian seasoning Adjust according to taste.
  • 1 tsp salt To taste.
  • 1 tsp black pepper To taste.

Preparation

  • In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks.
  • Add chopped onion, celery, and garlic to the beef for additional flavor and sauté until softened.
  • Drain the excess fat from the pot.

Cooking

  • Add the diced potatoes, chopped carrots, canned tomatoes, and beef broth to the pot.
  • Stir in the seasonings and bring the mixture to a boil.
  • Reduce the heat and let the soup simmer for 15-20 minutes until the vegetables are tender.

Notes

For a heartier soup, you can add cooked pasta just before serving. This soup freezes well for up to three months.
