Ingredients
  

For the chocolate version

  • 1 cup gluten-free flour 1 cup + 2 tbsp of this flour is required
  • 2 tbsp gluten-free flour
  • ½ cup cocoa powder
  • ¼ tsp salt
  • ¼ cup dairy-free butter, softened
  • 2 tbsp coconut milk
  • ½ tsp vanilla extract
  • cup cane sugar
  • 2 tbsp agave or maple syrup

For the chocolate chip version

  • 1 ¼ cup gluten-free flour
  • ¼ tsp salt
  • ¼ cup dairy-free butter, softened
  • 3 tbsp coconut milk
  • 1 tsp vanilla extract
  • cup cane sugar
  • 3 tbsp mini chocolate chips, chopped

For the honey cinnamon version

  • 1 ¼ cup gluten-free flour
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ cup dairy-free butter, softened
  • 2 tbsp coconut milk
  • ½ tsp vanilla extract
  • cup cane sugar
  • ¼ cup coconut sugar
  • 2 tbsp honey or maple syrup Use maple syrup for vegan option.

Instructions
 

Preparation

  • For the chocolate version: Mix together 1 cup gluten-free flour, cocoa powder, and salt.
  • In another bowl, cream together the softened dairy-free butter and sugars, then add in the coconut milk and vanilla.
  • Combine the dry and wet ingredients and shape into teddy bear forms.
  • For the chocolate chip version: Use the same base, but fold in the chopped mini chocolate chips before shaping them into bears.
  • For the honey cinnamon version: Replace some of the sugar with honey and add in cinnamon for a different taste.

Baking

  • Preheat your oven to 350°F (175°C) and bake for about 10-12 minutes.

Notes

Store your homemade Teddy Grahams in an airtight container at room temperature for about a week. For longer storage, freeze them in a sealed container.
