  • 1 lb beef (brisket or chuck)
  • 8 oz noodles (udon or ramen) Cook according to package instructions.
  • 4 cups beef broth Homemade beef broth can enhance flavor.
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced Can add additional vegetables like mushrooms or bok choy.
  • 1 cup bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste) Adjust amount for desired spiciness.
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

  • In a large pot, heat sesame oil over medium heat.
  • Add sliced onion and garlic, and sauté until fragrant.
  • Add beef and cook until browned on all sides.
  • Pour in beef broth, soy sauce, gochujang, and bring to a boil.
  • Reduce the heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  • Remove the beef, shred it, and return it to the pot.
  • Add carrots and bell peppers, and simmer for an additional 10 minutes.
  • Cook noodles separately according to package instructions, then add them to the beef mixture.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with green onions and sesame seeds.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. The flavors will deepen over time, making them even more delicious. Reheat on the stovetop or in the microwave before serving.
