Ingredients
  

Chicken and Seasoning

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 Juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Pasta

  • 8 oz linguine pasta
  • to taste Parmesan cheese for serving

Instructions
 

Preparation

  • In a large skillet over medium heat, melt the butter and olive oil together.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the chicken pieces to the skillet and season with lemon juice, lemon zest, Italian seasoning, salt, black pepper, and red pepper flakes.
  • Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • While the chicken is cooking, cook the linguine according to package instructions; drain and set aside.
  • Once the chicken is done, toss in fresh parsley and remove from heat.

Serving

  • Serve the chicken over the linguine, topped with grated Parmesan cheese.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet over low heat or in the microwave, adding a splash of water to keep it moist. Consider marinating the chicken in lemon juice, garlic, and seasonings for extra flavor. For added crunch, top with sliced almonds or toasted pine nuts.
