Ingredients
  

Main Ingredients

  • 5 kg 5 kg / 10 lb leg ham (bone-in, skin on) (Note 1)
  • 30 cloves 30 cloves (for studding the ham, optional – mainly for decorative purposes)
  • 2 oranges 2 oranges, cut into quarters (Note 2)
  • 1 cup 1 cup (250ml) water
  • ¾ cup 3/4 cup (185ml) maple syrup (or use honey as a substitute)
  • ¾ cup 3/4 cup (165g) brown sugar, packed
  • 3 tbsp 3 tbsp Dijon mustard (American or other plain mustard can be used)
  • ¾ tsp 3/4 tsp ground cinnamon
  • ½ tsp 1/2 tsp allspice (or nutmeg)

Instructions
 

Preparation

  • Take the ham out of the fridge 1 hour prior to cooking.
  • Preheat the oven to 160°C / 320°F (140°C fan) and arrange the oven shelf in the lower third to center the ham.
  • In a bowl, mix together the glaze ingredients until combined. A whisk can be helpful for mixing smoothly.
  • Carefully remove the rind (skin) from the ham.

Cooking

  • Glaze the ham generously with the mixture.
  • Place the ham in the oven and bake, periodically basting with more glaze, until heated through and caramelized.

Notes

For serving, consider garnishing with slices of orange or using the cloves for decorative studding. Store leftovers properly by allowing the ham to cool and then wrapping tightly.
