Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf

A delicious twist on the classic meatloaf, this version uses ground chicken with garlic and Parmesan for a moist, tender dish that the whole family will love.

Meatloaf Ingredients

  • 2 lbs Ground Chicken Use fresh ground chicken for best results.
  • 1 cup Grated Parmesan Cheese Divided into two portions for the meatloaf and glaze.
  • ½ cup Panko Breadcrumbs Helps keep the meatloaf light and fluffy.
  • 2 large Eggs Bind the mixture together.
  • 4 cloves Garlic, minced Freshly minced for optimal flavor.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Dried Basil
  • ½ teaspoon Dried Parsley
  • ½ teaspoon Salt To taste.
  • ½ teaspoon Black Pepper To taste.
  • ¼ cup Whole Milk
  • 3 tablespoons Unsalted Butter For the glaze.
  • 2 cloves Garlic, minced For the glaze.
  • ¼ cup Grated Parmesan Cheese For the glaze.
  • 1 tablespoon Chopped Parsley For the glaze.
  • 1 pinch Salt

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • In a large mixing bowl, combine the ground chicken, 1 cup grated Parmesan cheese, panko breadcrumbs, eggs, 4 minced garlic cloves, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Gently mix until combined. Do not overmix.
  • Shape the mixture into a loaf shape or press it into a loaf pan.

Baking

  • Bake for 40-45 minutes, or until the meatloaf is firm and the internal temperature reads 165°F (74°C).

Glaze Preparation

  • While the meatloaf is baking, melt the butter in a saucepan over medium heat. Add 2 minced garlic cloves and sauté for 1-2 minutes until fragrant.
  • Stir in 1/4 cup grated Parmesan cheese and chopped parsley. Cook for another 1-2 minutes until slightly thickened.

Final Baking

  • Remove the meatloaf from the oven and brush the garlic Parmesan glaze generously over the top.
  • Return to the oven and bake for another 5-7 minutes until the glaze is bubbly and slightly golden.

Serving

  • Allow the meatloaf to rest for about 5 minutes before slicing. Garnish with extra fresh parsley and serve with your favorite sides.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months. Use fresh garlic for the best flavor.
