Dip Ingredients

  • 4 oz cream cheese, softened Make sure it's softened for easy mixing.
  • ½ cup sour cream Can use low-fat for a lighter version.
  • ¼ cup mayonnaise Can use low-fat for a lighter version.
  • 1 can Mexicorn, drained A blend of corn and peppers.
  • 1 can Rotel tomatoes with green chilies, undrained Mild heat; can choose 'mild' variety for less spice.
  • 1 cup shredded cheese (cheddar or Mexican blend) Use your preferred cheese blend.
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • In a medium mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth.
  • Stir in the drained Mexicorn and undrained Rotel tomatoes.
  • Add the shredded cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
  • Transfer the dip to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld.

Notes

Serve chilled or at room temperature with tortilla chips or fresh veggies. It can also be customized with additional ingredients like diced jalapeños or bell peppers.
