  • 2 cups pancake mix
  • 1 ¼ cups milk
  • 1 piece egg
  • ½ teaspoon vanilla extract
  • 1 lb breakfast sausage, cooked and crumbled
  • ½ cup maple syrup
  • ½ cup shredded cheddar cheese (optional) Can be replaced with other types of cheese like mozzarella or pepper jack.

Preparation and Baking

  • Preheat your oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish.
  • In a bowl, mix the pancake mix, milk, egg, and vanilla until the mixture is smooth.
  • Pour half of the batter into the greased dish.
  • Sprinkle the cooked sausage evenly over the top of the batter.
  • Drizzle the maple syrup over the sausage layer.
  • If desired, sprinkle the cheddar cheese over the top.
  • Pour the remaining batter over everything.
  • Bake in the oven for 25-30 minutes until golden brown and set in the center.
  • Let it cool slightly before slicing.
  • Serve warm with extra maple syrup on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be reheated in the microwave. For extra flavor, consider adding spices like cinnamon or nutmeg to the batter. You can make it egg-free by using unsweetened applesauce or an egg replacer.
