For the Peach Filling

  • 6 cups fresh peaches, peeled, pitted, and sliced (about 8-10 medium peaches) Choose ripe peaches for best flavor.
  • ½ cup granulated sugar For peaches

  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch

For the Biscuit Topping

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar For topping
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) cold unsalted butter, cut into small pieces
  • ½ cup milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1 tablespoon coarse sugar For sprinkling

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  • In a large bowl, combine the sliced peaches, 1/2 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently to coat the peaches evenly. Pour the peach mixture into the prepared baking dish and spread it in an even layer.

Biscuit Topping

  • In a separate medium bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and salt for the topping.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • In a small bowl, whisk together the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. The dough will be soft.

Assembly and Baking

  • Drop spoonfuls of the biscuit dough evenly over the peach mixture in the baking dish. You can flatten them slightly if you like, but they will spread as they bake.
  • Sprinkle the coarse sugar over the biscuit topping.
  • Bake for 35-45 minutes, or until the peach filling is bubbly and the topping is golden brown and cooked through.
  • Remove from the oven and let cool for at least 15-20 minutes before serving. This allows the filling to set.

Notes

Peach Cobbler is best served warm, straight from the oven. Serve it with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
