  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice) Alternatives include pepper jack or Monterey Jack.
  • ½ cup diced bell peppers Feel free to add more veggies like spinach or mushrooms.
  • ½ cup diced onions
  • 1 teaspoon salt
  • ½ teaspoon black pepper Adjust according to taste.
  • 4 large flour tortillas Whole wheat tortillas are a great alternative.
  • Sour cream and salsa for serving (optional)

Preparation and Cooking

  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add diced bell peppers and onions to the skillet, cooking until softened.
  • In a bowl, whisk the eggs with the salt and pepper.
  • Pour the eggs into the skillet with the beef and veggies, stirring until the eggs are cooked through.
  • Remove from heat and stir in shredded cheese until melted.
  • Warm the tortillas in a separate pan or microwave.
  • Spoon the beef scramble into the center of each tortilla, wrap tightly, and serve with sour cream and salsa if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 1 month. To reheat, pop them in the microwave or a skillet until warmed through.
