Ingredients
  

For the biscuits

  • 240 grams all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 113 grams unsalted butter, cold and cubed Ensure butter is cold for flaky biscuits.
  • 180 milliliters buttermilk

For the filling

  • 8 pieces cooked breakfast sausage links or patties

Optional toppings

  • Honey or maple syrup For drizzling on top before serving.

Instructions
 

Preparation

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Cut in the cold cubed butter with a pastry cutter or your fingertips until the mixture looks like coarse crumbs.
  • Pour in the buttermilk and gently stir until a soft dough forms. Be careful not to overmix.
  • Transfer the dough to a lightly floured surface and roll it out to a thickness of about 1.25 cm.
  • Cut the dough into 8 equal pieces. Shape each piece to wrap around a sausage. Place a cooked sausage on each portion and pinch the edges to seal them.

Baking

  • Preheat your oven to 220°C and line a baking sheet with parchment paper.
  • Arrange the wrapped sausages seam-side down on the sheet.
  • Bake for 15 to 18 minutes, until the biscuits are golden brown.

Notes

To store leftovers, place the baked biscuits in an airtight container. They can be kept at room temperature for up to 2 days. For longer storage, refrigerate for up to a week or freeze for up to 3 months. Reheat in the oven before serving.
