  • 3 tablespoons Olive oil For cooking and marinating.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black pepper Freshly ground preferred.
  • ½ cup Parmesan cheese Optional topping for added flavor.

Preparation

  • Place chicken breasts in a plastic bag and pound to an even thickness.
  • Mix olive oil, lemon juice, garlic, and herbs to create a marinade.
  • Marinate the chicken for at least 30 minutes.

Cooking

  • For skillet cooking, heat olive oil in a skillet over medium heat.
  • Season chicken breasts with salt and pepper and cook in the skillet until golden.
  • Add chopped tomatoes and fresh basil, cooking until chicken reaches 165°F.
  • For Instant Pot, add chicken, diced tomatoes, garlic, and spices. Seal and cook for 10 minutes.
  • For baked method, preheat oven to 375°F, place seasoned chicken in a dish, cover with marinara sauce, and bake for 25-30 minutes.

Notes

For extra flavor, consider adding garlic seasoning or cream to the sauce. Chicken can be paired with garlic bread or salads for a complete meal. Store leftovers in an airtight container and consume within four days if refrigerated or up to three months if frozen.
