- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup cherry tomatoes halved
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- ¼ cup fresh basil leaves chopped
Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 5–7 minutes per side. Remove the chicken from the skillet and set aside.
Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for 3–4 minutes until they begin to soften.
Make the Creamy Sauce: Reduce the heat to medium-low. Stir in the heavy cream and Parmesan cheese, cooking until the cheese has melted and the sauce has slightly thickened, about 2–3 minutes.
Combine and Simmer: Return the cooked chicken breasts to the skillet, spooning the sauce over them. Simmer for an additional 5 minutes to allow the flavors to meld.
Add Fresh Basil: Stir in the chopped fresh basil just before serving.
Serve: Serve the Tomato Basil Chicken Breasts hot, optionally over pasta, rice, or with a side of vegetables.
