Main Ingredients
- 20 small flour tortillas about 5 inches wide
- 14 oz pizza sauce
- 24 oz shredded mozzarella cheese
- 80 slices pepperoni
- 1 tbsp cooking oil for brushing
- 1 tsp garlic powder
- ½ tsp Italian seasoning
Cooking
Prep. Heat the oven to 400 degrees F and line two baking sheets with parchment.
Warm. Microwave the stacked tortillas under a damp towel for 10 to 15 seconds.
Fill. Spread 1 tablespoon sauce on each, then add 1/3 cup mozzarella and 4 slices pepperoni.
Roll. Roll tightly and place seam side down on the pans.
Season. Brush with the oil mixed with garlic powder and Italian seasoning.
Bake. Bake 15 to 18 minutes until golden and crisp, then cool 3 minutes.
Substitutions: Use cooked sausage, mushrooms, or spinach in place of the pepperoni.
Tips: Warm the tortillas so they do not crack and keep a 1/2 inch border. One serving is 1 roll up.
Storage: Refrigerate 3 to 4 days and reheat in the oven. Freeze unbaked on a tray, then bag.
