For the Chicken

  • 4 pieces Boneless skinless chicken thighs or breasts Choose based on preference; thighs are juicier.

Instructions
 

Preparation

  • In a bowl, mix the yogurt, olive oil, lemon juice, garlic, ginger, cumin, coriander, and paprika until smooth.
  • Place the chicken pieces in a resealable bag, pour the marinade over, seal, and rub the marinade into the chicken.

Marinating

  • Marinate chicken breasts for at least 2 hours, or up to 24 hours for thighs, to achieve the best flavor.

Cooking

  • For grilling, heat the grill to medium-high, cook chicken for 5-7 minutes on each side until cooked through.
  • For baking, preheat the oven to 425°F (220°C) and bake chicken in a roasting pan for 35-40 minutes, until the internal temperature reaches 165°F (75°C).

Notes
