Creamy Lemon Orzo Risotto

Lemon orzo risotto gives you the creamy, spoonable comfort of risotto in about 20 minutes, without standing over the pot ladling in broth. The orzo cooks directly in chicken or vegetable broth, then a splash of cream, a handful of Parmesan and plenty of fresh lemon turn it silky and bright.

It works as a simple main with a salad, or as a side for chicken, fish or shrimp. We already have a few orzo recipes on the site, and this one is the closest to a classic risotto in texture. For other takes, see our lemon orzo with peas and garlic butter lemon orzo.

Why This Works

Orzo is a small pasta shaped like rice, and like rice it releases starch as it cooks. Cooking it right in the broth, and stirring often, turns that starch into a naturally creamy sauce. That is the same principle behind risotto, only much faster.

Adding the cream, cheese and lemon at the end keeps the lemon flavor fresh and prevents the sauce from splitting. The zest gives fragrance and the juice gives tang, so use both.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese, plus extra for serving
  • 1 lemon, zested and juiced
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

How to Make Lemon Orzo Risotto

1. Boil the broth. Bring the broth to a boil in a large, deep skillet or a medium pot.

2. Cook the orzo. Stir in the orzo and reduce the heat to a steady simmer. Cook for about 8 to 10 minutes, stirring often, until the orzo is al dente and most of the broth has been absorbed.

3. Add the cream. Stir in the heavy cream, then add the Parmesan, lemon zest and lemon juice.

4. Simmer. Cook for another 2 to 3 minutes, stirring, until the sauce is creamy and the orzo is hot throughout.

5. Season and serve. Taste and add salt and pepper as needed. Garnish with parsley and a little extra Parmesan, and serve right away.

How to Serve

Serve the orzo risotto immediately, while it is at its creamiest. It pairs well with roasted chicken, seared salmon or garlicky shrimp. For a full dinner, try it next to our creamy shrimp scampi pasta ideas, or simply add a green salad and crusty bread.

Because the dish is so quick, have everything measured before you start. Zest and juice the lemon, grate the cheese and keep the cream nearby, since the final minutes move fast and the orzo can thicken suddenly once it is off the heat.

How to Store and Reheat

Orzo keeps absorbing liquid as it sits, so the texture is best fresh. Refrigerate leftovers within two hours, as the FDA safe food handling guide advises, and use them within 3 days.

Reheat in a skillet over low heat with a splash of broth, milk or cream, stirring until the creaminess returns.

Tips and Variations

  • Stir often. Stirring releases starch, which is what makes the dish creamy.
  • Grate the cheese yourself. Freshly grated Parmesan melts more smoothly than the pre-grated kind.
  • Add garlic. A clove or two of minced garlic, or a little sauteed onion, builds a deeper base.
  • Adjust the lemon. Add more zest or juice a little at a time until the flavor suits you.
  • Add vegetables. Stir in peas, baby spinach or sauteed mushrooms at the end.
  • Add protein. Shredded rotisserie chicken or cooked shrimp turns it into a complete meal.

FAQ

Is orzo risotto the same as real risotto?

Not exactly. Real risotto uses short-grain rice and is stirred for longer. Orzo risotto borrows the technique and gives a similar creamy result in less time.

Can I make it without cream?

Yes. Use a little extra Parmesan and a splash of milk for a lighter version, though the sauce will be less rich.

Why is my orzo sticky?

Some stickiness is normal because of the starch. If it is too thick, stir in a splash of warm broth until it loosens.

Can I use nutritional yeast instead of Parmesan?

You can for a dairy-free flavor, though the taste and texture will differ from the cheese version.

Can I double the recipe?

Yes, but use a wider pan so the orzo cooks evenly, and keep stirring. The timing may run a little longer.
