  • 2 eggs
  • 2 small garlic cloves (crushed)
  • 1 tsp white vinegar
  • 2 1/4 cups / 335g plain / all-purpose flour
  • 2 tsp baking powder (Note 2)
  • 1/2 tsp baking soda (bi-carb) (Note 2)
  • 1/2 tsp salt

Directions:

  1. Use a standard box grater to grate the zucchini. Measure out 2 cups and place in a bowl. Sprinkle with salt and mix with your fingers. Let it sit for 20 minutes.
  2. After 20 minutes, squeeze the zucchini with your hands to remove excess water. Place it in another bowl and set aside.
  3. Preheat your oven to 180°C / 350°F.
  4. Butter and line a loaf pan (Note 3).
  5. In a bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt.
  6. In another bowl, mix the wet ingredients: milk, melted butter, canola oil, eggs, crushed garlic, and vinegar.
  7. Make a well in the center of the dry ingredients. Pour in the wet ingredients and mix quickly until the flour is incorporated (Note 4).
  8. Stir through the zucchini gently.
  9. Spread 1/3 of the batter in the loaf pan. Top with 4 slices of cheese.
  10. Spread with more batter, add another 4 slices of cheese, and finish with the remaining batter. Smooth the top.
  11. Bake for 50 minutes or until a skewer inserted into the center comes out clean.
  12. Optionally, brush the top with a bit of melted butter.
  13. Cool in the pan for 10 minutes, then transfer to a rack to cool for at least 20 minutes before slicing.
