  • 1 tsp paprika powder
  • 1/2 tsp salt + black pepper
  • 1 tbsp olive oil (for cooking)
  • 1/2 small onion (diced – brown, white, or yellow)
  • 1 garlic clove (minced)
  • 1 red capsicum / bell pepper (diced)
  • 1 green capsicum / bell pepper (diced)
  • 4 flour tortillas (20cm/8”)
  • Olive oil spray
  • 1 cup grated cheese (or more to taste – tasty, cheddar, Monterey Jack, Pepper Jack or other melting cheese)

Directions

  1. Place the chicken pieces in a bowl and mix in cumin, garlic powder, cayenne pepper, paprika, salt, and pepper to coat the chicken evenly.
  2. Heat 1 tablespoon of olive oil in a skillet over high heat. Add the diced onion and minced garlic, and cook for 1 minute.
  3. Add the diced red and green capsicum, and cook for 2 more minutes until they start to soften. Transfer this mixture into the bowl with the chicken.
  4. Return the skillet to the stove and add the marinated chicken. Cook until browned. Add this to the same bowl and let it cool. For faster cooling, cover and refrigerate or spread it out on a plate.
  5. Preheat your oven to 220C / 430F (standard) or 200C/390F (fan/convection).
  6. Lightly spray a baking tray with olive oil. Heat this tray in the oven while you assemble your quesadillas.
