  • Salt and pepper

  • 100g/3.5 oz salami slices (chopped)
  • 1/4 red onion (finely chopped)
  • 1/3 cup black olive slices
  • 1 cup (100g) mozzarella cheese (shredded)

Directions

  1. Preheat your oven to 180C/350F.
  2. Carefully break or cut the stems off the mushrooms and chop them for later use.
  3. Place the mushroom caps upside down. Using a small, sharp knife, cut a small cross in each mushroom. This helps drain excess water.
  4. Brush the tops of the mushrooms with olive oil and quickly sprinkle with salt and pepper.
  5. Flip the mushrooms and lightly dab the insides with the remaining oil, then sprinkle with more salt and pepper.
