How to Make Watermelon Mojitos

Ingredients:

  • 1 personal sized seedless watermelon
  • 2 tbsp whole mint leaves (10-12 medium sized leaves)
  • 1 tbsp freshly squeezed lime juice
  • 1 tbsp white sugar
  • 1½ oz white rum
  • Club soda
  • 1 mint sprig (to garnish)
  • 1 watermelon wedge (to garnish)

Directions:

  1. Slice the watermelon in half. Remove the skin and pith from one half, then dice it into cubes.
  2. Place the cubes into a blender and blend on high for 30 seconds, or until liquified.
  3. Set a fine mesh strainer over a bowl and pour the puree through it. Discard the pulp.
  4. Cut the remaining watermelon into slices and then into wedges.
  5. In a tall collins glass, combine the mint, lime juice, and sugar. Use a muddler to gently mash the mint leaves and dissolve the sugar into the lime juice. Be careful not to tear the mint leaves, as this can create a bitter taste.
  6. Pour in the rum, then add enough ice to fill the glass.
  7. Pour 4 oz (half a cup) of watermelon juice over the ice and mix with a bar spoon.
  8. Top with club soda and garnish with mint leaves and watermelon wedges.

How to Serve Watermelon Mojitos

Serve Watermelon Mojitos in tall glasses for a nice presentation. Add a mint sprig and a watermelon wedge on the rim for decoration. This drink is best enjoyed immediately after making to keep it refreshing and fizzy.

How to Store Watermelon Mojitos

Watermelon Mojitos are best consumed fresh. However, if you have leftover watermelon juice, store it in the refrigerator in a sealed container for up to 3 days. It’s not recommended to store the mixed mojitos, as the club soda will lose its fizz.

Tips to Make Watermelon Mojitos

  • Use ripe, sweet watermelon for the best flavor.
  • Adjust the amount of sugar based on your taste preferences and the sweetness of the watermelon.
  • Try chilling your glasses beforehand to keep your drink cold longer.

Variation

You can make a non-alcoholic version of Watermelon Mojitos by simply omitting the white rum. Replace it with more club soda or sparkling water for a refreshing mocktail.
